1/4 cows now available for sale!! Pasture fed, pasture finished beef, just how it was done for the past 10,000 years. A 1/4 cow from my Dexter breed after processing is approximately 46-50lbs of meat. Assortment is as follows, with possible slight variations in exact lbs, but this is pretty close:

  • 23 lbs of ground beef (1lb packages, 85/15 lean mix)

  • 6 KC strip steaks (2-3lbs total)

  • 4 ribeye steaks (2-3lbs total)

  • 2-3 filet medallions

  • 2-3 Top Sirloin steaks (2lbs total)

  • 4 Sirloin Tip Steaks (2-3lbs total)

  • 2 lbs stew meat

  • 3 Roasts - Chuck, rump, pikes peak, arm (8-10 lbs total)
